Ingredients

  • Base
  • 2 cups long grain white rice – Jasmine or basmati works but plain long grain white is traditional.
  • 3 ½ cups chicken broth or vegetable broth – Adds depth of flavor; use water if you want it lighter.
  • 2 tbsp unsalted butter – Creates richness and balances the spices.
  • Seasonings
  • 1 tsp ground turmeric – Gives the rice its signature yellow color and earthy flavor.
  • ½ tsp onion powder – Subtle sweetness and aroma.
  • ½ tsp garlic powder – A gentle savory kick.
  • ½ tsp paprika – Adds warmth and enhances the color.
  • Salt and pepper to taste – Essential for balancing flavors.
  • Optional Add-ins
  • ½ cup frozen peas – Classic addition for sweetness and color contrast.
  • ¼ cup finely chopped carrots – Adds texture and nutrition.
  • Pinch of saffron if using instead of turmeric – For an elevated, aromatic twist.

Instructions

  • Rinse the rice (5 minutes): Place rice in a fine-mesh strainer and rinse under cold water until it runs clear. This prevents clumping.
  • Melt butter (2 minutes): In a medium saucepan over medium heat, melt the butter until it foams slightly.
  • Bloom spices (2 minutes): Stir in turmeric, onion powder, garlic powder, paprika, salt, and pepper. Cook for 30 seconds until fragrant — your kitchen will smell amazing.
  • Add rice (1 minute): Stir in rinsed rice, coating each grain in the buttery spice mixture.
  • Add liquid (1 minute): Pour in chicken broth (or veggie broth). Stir once and bring to a boil.
  • Simmer (18–20 minutes): Reduce heat to low, cover, and cook until rice is tender and liquid is absorbed. Don’t peek too often — it lets out steam!
  • Fluff & finish (5 minutes): Turn off the heat, let the rice rest 5 minutes, then fluff with a fork. Stir in frozen peas if using, letting the residual heat warm them through.

Notes

  • Rinse rice until the water runs clear to prevent clumping.
  • Rest the rice after cooking before fluffing to keep it light and tender.
  • Avoid over-stirring once the liquid is added—this makes it gummy.
  • Adjust turmeric to taste: more for deeper yellow, less for mild flavor.
  • Rice cooker method: Add all ingredients, press start, and it’s hands-off.
