  • Broth & Seasoning
  • 6 cups vegetable broth or chicken broth for extra depth

  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • ½ teaspoon smoked paprika optional but adds warmth
  • 1 bay leaf
  • To Finish

Instructions
 

  • Sauté the Aromatics
  • Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery. Cook for about 5–6 minutes, stirring occasionally, until the onions are soft and translucent.
  • Add minced garlic and cook for another 30 seconds, just until fragrant.
  • Add the Vegetables
  • Stir in the potatoes, green beans, corn, zucchini, and diced tomatoes. Let everything cook together for a minute or two — this helps the veggies soak up that aromatic base.
  • Pour in Broth and Seasonings
  • Add the vegetable broth, salt, pepper, thyme, basil, smoked paprika, and bay leaf. Stir well. Bring to a boil, then reduce the heat to low and let it simmer uncovered for about 25–30 minutes, or until the potatoes are tender and the flavors have blended beautifully.
  • Taste and Adjust
  • Once the vegetables are cooked through, remove the bay leaf. Taste and adjust seasoning — you might want a pinch more salt or a squeeze of lemon juice for brightness.
  • Garnish and Serve
  • Ladle the soup into bowls, sprinkle with fresh parsley, and top with a drizzle of olive oil or grated Parmesan if you’d like. Serve hot with crusty bread or a grilled cheese sandwich for the ultimate cozy meal.
