Ingredients
  

  • For the Base
  • 2 cups cooked white rice or make it special with cilantro lime rice — 2 cups rice, juice of 1 fresh lime, and 2 tablespoons chopped cilantro.
  • For the Taco Meat
  • 1 pound lean ground beef or ground chicken/ground turkey.
  • 2 tablespoons homemade taco seasoning or 1 store-bought packet.
  • ½ cup water to help coat the meat with seasoning.
  • Toppings & Garnishes
  • 1 cup black beans rinsed and drained.
  • 1 cup shredded lettuce – Crunchy base layer.
  • 1 cup shredded cheese cheddar, Monterey Jack, or Mexican blend.
  • ½ cup pico de gallo – Adds freshness.
  • ½ red onion diced – For sharpness and crunch.
  • ½ cup sour cream – Creamy coolness.
  • ½ cup guacamole or sliced avocado – Extra richness.
  • Fresh lime juice – For brightness.
  • Tortilla chips – Crushed on top or served on the side.
  • Hot sauce – Optional kick.

Instructions
 

  • Cook the rice: Prepare white rice according to package directions. For extra flavor, stir in lime juice and chopped cilantro once cooked.
  • Brown the meat: In a large skillet over medium heat, cook ground beef (or chicken/turkey) until no longer pink, about 6–7 minutes. Drain excess fat if needed.
  • Season the meat: Stir in taco seasoning and ½ cup water. Simmer for 3–4 minutes, stirring occasionally, until the mixture thickens and is fragrant.
  • Prep toppings: While the meat cooks, chop veggies, dice red onion, and set out black beans, cheese, and other garnishes.
  • Assemble the bowls: Divide rice among 4 bowls. Top with taco meat, then layer with black beans, lettuce, cheese, pico de gallo, red onion, sour cream, and guacamole.
  • Finish & serve: Squeeze fresh lime juice on top, sprinkle with crushed tortilla chips, and add a dash of hot sauce if you like things spicy.
