  • 1 cup confectioner’s sugar
  • 1 large egg
  • 2 teaspoons vanilla extract

  • Assorted melting chocolate dark, milk, white

Instructions
 

  • Prepare the Dough: In a mixing bowl, cream together the softened butter and confectioner’s sugar until smooth. Beat in the egg and vanilla extract until well combined.
  • Mix the Dry Ingredients: Gradually add the all-purpose flour to the wet mixture, ensuring it's fully incorporated before folding in the crushed freeze-dried strawberries.
  • Chill the Dough: Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 2 hours or overnight.
  • Roll Out and Cut: Preheat your oven to 350°F. Roll the chilled dough to approximately 1/8 inch thick on a floured surface. Use a cookie cutter to cut out shapes and place them on a lined baking sheet.
  • Bake to Perfection: Bake the cookies for 7-9 minutes, or until edges are slightly golden but the overall color remains pale.
  • Prepare the Chocolate Dip: Melt your choice of chocolate using the microwave method: heat at half power in 30-second increments, stirring until smooth.
  • Dip and Decorate: Dip each cooled wafer cookie halfway into the melted chocolate, allowing excess to drip off. Place on parchment paper and sprinkle with more crushed freeze-dried strawberries.
  • Setting and Storing: Allow the dipped cookies to set at room temperature for about 5-10 minutes. Store in an airtight container for up to 24 hours.
