Ingredients
  

  • 8 bone-in skin-on chicken thighs (about 3 lbs total)
  • 2 tbsp olive oil helps the rub stick and crisp the skin
  • 2 tbsp brown sugar balances smoke and spice
  • 1 tbsp smoked paprika enhances smoky depth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1 tsp black pepper freshly cracked for best flavor
  • ½ tsp cayenne pepper optional, adds a little kick
  • ½ cup BBQ sauce your favorite, for finishing if desired

Instructions
 

  • Preheat the smoker
  • Heat your smoker to 225°F. I recommend using fruitwoods like apple, cherry, or pecan for a subtle sweetness. Hickory works too for a stronger smoke flavor.
  • Prep the chicken thighs (10 minutes)
  • Pat the chicken thighs dry with paper towels (this helps the skin crisp).
  • Rub with olive oil.
  • Mix the brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne. Sprinkle generously over both sides.
  • Smoke the chicken (1 hour 15 minutes)
  • Place the thighs skin side up on the smoker grates.
  • Smoke until the thighs reach an internal temperature of 165°F, measured with a meat thermometer at the thickest part (about 75–90 minutes).
  • Optional: Glaze with BBQ sauce (10 minutes)
  • In the last 10 minutes of cooking, brush the thighs with BBQ sauce for a sticky, caramelized finish.
  • Rest & serve (5 minutes)
  • Let the chicken rest for 5 minutes before serving. This locks in the juices.

Notes

  • Use a meat thermometer to ensure thighs reach 165°F.
  • Keep the skin side up for crispy skin.
  • Don’t oversmoke—too much smoke makes chicken bitter.
  • For ultra-crispy skin, raise the smoker to 375°F for the last 10 minutes.
  • Leftovers store well in the fridge up to 4 days or freezer up to 3 months.
