- Large or jumbo shrimp 16-20 count per pound, peeled or shell-on
- Crab legs or crawfish optional
- Red potatoes cut into halves or quarters
- Corn on the cob cut into 3-4 pieces
- Andouille sausage or kielbasa sliced into 1-inch pieces
- Fresh garlic whole, halved horizontally
- Large onion quartered
- Fresh lemons juiced and halved
- Bay leaves
- Fresh thyme sprigs
- Old Bay seasoning
- Whole black peppercorns
- Salt sea salt recommended
- Butter for serving
- Fresh parsley for garnish
Preparation:
Use a large stock pot (12 quarts or more). Boil 4 quarts of hot water.
Add sliced onion, halved garlic, ½ cup Old Bay seasoning, 1½ tablespoons fresh thyme, and 2-3 halved lemons to the pot. Let boil, then reduce heat to simmer for 5 minutes to make the broth.
Cooking:
Add red potatoes and cook for 15 minutes.
Add corn, cook for 3 minutes, then add sausage and cook for 4-5 minutes.
Finally, add shrimp and cook for 1-2 minutes, until they turn pink and curl into a C-shape.
Draining and Serving:
Save ¼ cup of liquid for later. Drain the rest and serve the seafood and veggies on a large serving platter.
Drizzle with 6 tablespoons of melted butter and 2 tablespoons of fresh lemon juice. Garnish with parsley and more Old Bay seasoning.
