Ingredients

  • For the patties:
  • Lean ground beef 80/20 meat-to-fat ratio
  • Eggs
  • Breadcrumbs traditional or panko
  • Worcestershire sauce
  • Dijon mustard
  • Dried herbs like oregano
  • Onion powder
  • Garlic powder
  • Salt and pepper
  • Optional Instant potato flakes
  • For the gravy:
  • Cremini or baby bella mushrooms
  • Butter
  • Olive oil
  • Fresh garlic
  • Thyme
  • Beef broth
  • Worcestershire sauce
  • Dijon mustard
  • Cornstarch slurry

Instructions

  • Mix and Form Patties:
  • Mix ground beef with seasonings, eggs, and breadcrumbs using light hands. Form 4 uniform oval patties about 3/4-inch thick. Chill patties for 15 minutes.
  • Sear the Patties:
  • Preheat skillet to medium-high heat. Cook patties for 3–4 minutes per side until browned. Avoid moving patties while cooking. Remove and set aside.
  • Prepare the Gravy:
  • In the same skillet, sauté sliced mushrooms and onions in butter and olive oil until golden. Add garlic and thyme. Deglaze the pan with beef broth. Stir in Worcestershire sauce, Dijon mustard, and cornstarch slurry.
  • Simmer and Serve:
  • Let the gravy simmer to blend flavors and thicken. Return patties to the skillet and spoon gravy over them. Cook until patties are heated through. Serve hot with your favorite sides.

Notes

  • For added moisture, use instant potato flakes in the meat mixture.
  • Don’t overwork the meat; mix gently for tender patties.
  • You can make this gluten-free by using gluten-free breadcrumbs and cornstarch.
  • Try turkey as a leaner substitute and use chicken stock instead of beef stock.
  • Extra vegetables like bell peppers or spinach can be mixed into the patties.
  • Best sides include mashed potatoes, egg noodles, or roasted veggies.
  • Letting the gravy simmer after adding cornstarch makes it smooth and flavorful.
  • Use the meat drippings to deepen the flavor of your mushroom gravy.
