Preheat the Oven
Preheat your oven to 425°F (220°C). A hot oven is key to creating those crisp, golden edges.
Line a baking sheet with parchment paper or foil for easy cleanup.
Prepare the Broccoli
Rinse and dry your fresh broccoli florets thoroughly. Moisture causes steaming instead of roasting, so take an extra minute to pat them dry.
Cut any large florets into bite-sized pieces — about 1½ inches across — so they cook evenly.
Season the Broccoli
In a large bowl, toss the broccoli florets with olive oil, minced garlic, salt, pepper, and red pepper flakes (if using).
Use your hands or a spatula to coat every floret — you want a light, even sheen of oil.
Spread It Out
Arrange the broccoli in a single layer on the prepared baking sheet. Don’t overcrowd! If the florets are too close together, they’ll steam instead of roast.
For the crispiest results, leave a little space between each piece.
Roast Until Crispy
Roast in the oven for 18–22 minutes, flipping halfway through. You’ll know it’s done when the edges are golden brown and slightly charred, and the stems are tender when pierced with a fork.

Finish and Serve
