Ingredients
  

  • For the Fish
  • 4 Chilean sea bass fillets 6 ounces each, about 1 ½ inches thick – Look for wild-caught if possible.
  • Salt and freshly ground black pepper – To season simply and enhance the natural flavor.
  • 1 tablespoon olive oil – High smoke point ideal for a clean, crisp sear.
  • 2 tablespoons unsalted butter – Adds richness and helps brown the fish beautifully.
  • For the Sauce
  • 1 tablespoon fresh lemon juice – Brightens up the buttery sauce.
  • 1 teaspoon minced garlic – Infuses a hint of savory aroma.
  • 1 tablespoon chopped parsley – Optional for color and freshness.
  • For Serving Optional but Delicious
  • Creamy mashed potatoes
  • Sautéed green beans or asparagus
  • Extra lemon wedges for garnish

Instructions
 

  • Prep the Fillets
  • Remove the sea bass from the fridge about 15 minutes before cooking to bring it closer to room temperature.
  • Pat each fillet dry with paper towels — this step is crucial for getting that perfect sear.
  • Season both sides generously with salt and pepper.
  • Heat the Pan
  • Use a heavy-bottomed skillet (cast iron or stainless steel works best).
  • Set it over medium-high heat and add olive oil. When the oil shimmers and just starts to smoke, it’s ready.
  • Sear the Sea Bass
  • Place the fillets in the skillet skin-side down (if your fillets have skin). Press gently with a spatula to prevent curling.
  • Let them sear undisturbed for 4–5 minutes. You’ll know they’re ready to flip when the fish releases easily from the pan and you see a golden crust forming on the edges.
  • Flip and Butter-Baste
  • Carefully flip each fillet. Add butter and minced garlic to the pan. Once the butter melts, tilt the skillet slightly and spoon the melted butter over the top of the fish repeatedly for about 2 minutes.
  • Cook another 3–4 minutes, depending on the thickness of your fillets, until the fish flakes easily with a fork.
  • Finish with Lemon and Serve
  • Turn off the heat and squeeze fresh lemon juice over the fillets. Sprinkle with chopped parsley if desired.
  • Serve hot — perhaps over a bed of creamy mashed potatoes or alongside crisp green beans for a beautiful contrast.

Notes

  • Dry is key. Always pat the fish dry with paper towels before searing — moisture prevents that golden crust.
  • Don’t overcrowd the pan. Cook in batches if needed. Overcrowding traps steam and softens the sear.
  • Handle gently. Sea bass is delicate. Use a thin metal spatula for easy flipping.
  • Adjust cook time by thickness. For thinner fillets (1 inch), 10–11 minutes total is plenty; thicker fillets (1½–2 inches) may need 14–15 minutes.
  • Rest briefly before serving. Letting the fish rest for 2–3 minutes allows juices to redistribute for perfect texture.
  • To store leftovers: Cool completely and refrigerate in an airtight container for up to 3 days. Reheat gently in a skillet or oven.
