Ingredients

  • For the Miso Marinade
  • 3 tablespoons white miso paste – Mild and slightly sweet; found in most grocery stores near tofu or in Asian markets.
  • 1 tablespoon soy sauce – Adds umami depth and saltiness.
  • 1 tablespoon brown sugar – Balances the miso’s saltiness and helps the glaze caramelize.
  • 1 tablespoon mirin optional but recommended – A sweet Japanese rice wine that enhances flavor.
  • 1 teaspoon sesame oil – Just a touch gives a nutty aroma that ties everything together.
  • 1 teaspoon fresh grated ginger – For warmth and freshness.
  • 1 teaspoon minced garlic – A hint of savory punch.
  • For the Salmon
  • 4 salmon fillets 6 ounces each – Fresh, skin-on salmon works best.
  • ½ teaspoon salt and ¼ teaspoon black pepper – Simple seasoning to enhance the flavor.
  • 1 teaspoon olive oil – Lightly brushed to prevent sticking.
  • For Garnish
  • Sesame seeds – For a little crunch and visual appeal.
  • Chopped green onions – Adds freshness and color.
  • Lemon wedges – Optional but great for balancing richness.

Instructions

  • Prepare the Marinade
  • In a small bowl, whisk together white miso, soy sauce, brown sugar, sesame oil, garlic, and ginger. Mix until smooth and glossy — the texture should be like a thin paste.
  • If you have time, let the marinade sit for 5 minutes so the flavors meld (and so you can sneak a little taste-test).
  • Marinate the Salmon
  • Place your salmon fillets in a shallow dish or resealable bag. Spoon the miso mixture over the top, coating all sides evenly.
  • Let it marinate for at least 15 minutes at room temperature, or up to 1 hour in the fridge for a deeper flavor. The longer it sits, the more the miso and soy soak into the salmon’s buttery flesh.
  • Preheat the Oven
  • Set your oven rack in the middle position and preheat your oven to 425°F.
  • Line a baking sheet with parchment paper (for easy cleanup) and lightly brush it with olive oil to prevent sticking.
  • Bake or Broil
  • Place the salmon fillets skin-side down on the baking sheet. Spoon any remaining marinade on top.
  • Bake for 10–12 minutes, or until the salmon flakes easily with a fork and the glaze looks glossy and caramelized.
  • For that golden finish, switch your broiler to high and broil for 1–2 minutes. Keep a close eye — the sugar in the glaze can burn quickly (but that little char? Absolute perfection).
  • Garnish and Serve
  • Remove from the oven, sprinkle with sesame seeds and chopped green onions, and squeeze a little fresh lemon juice on top.
  • That’s it — your miso glazed salmon is ready to impress!
  • Serve immediately while it’s tender and hot, or let it cool for meal prep lunches throughout the week.

Notes

  • Pat the salmon dry first. Extra moisture can keep the glaze from sticking.
  • Don’t over-marinate. Miso’s saltiness can toughen the fish if left too long.
  • Line your pan! The glaze gets sticky — parchment paper will save you scrubbing time.
  • Broil carefully. Watch it like a hawk — the glaze caramelizes fast.
  • Choose quality salmon. A good salmon fillet (wild-caught if possible) makes all the difference.
