- 2-¼ pounds fresh strawberries about 8 cups whole berries
- 7 cups granulated sugar
- ¼ cup lemon juice
- 1 box Sure-Jell fruit pectin 1.75 ounces

Preparing the Strawberries: Wash and hull 5 pounds of ripe strawberries. Crush them to get 5 cups of crushed strawberries. A food processor can help, but avoid over-processing.
Mixing and Cooking: In a large pot, combine the crushed strawberries with 1 box of Sure-Jell pectin and 1/2 cup of lemon juice. Heat over high heat until it boils, stirring constantly. Then add 7 cups of sugar and boil again for 1 minute while stirring.
Filling and Sealing: Remove the pot from heat and remove any foam. Pour the hot jam into clean, sterilized jars, leaving 1/4 inch space at the top. Clean the rims and tightly secure the lids.
Water Bath Processing: Process the jars in a boiling water bath for 10 minutes. If you are at a higher altitude, add 5 extra minutes for every 1,000 feet.
- Sterilizing Jars: While pre-sterilization isn’t necessary for jams processed for 10 minutes or more, sterilizing jars helps ensure safety and quality.
- Storage Tips: Let your jars cool completely after the water bath and store them in a cool, dry place. For optimal shelf life, store unopened jars at temperatures between 50-70°F for up to 1 year. Once opened, refrigerate at 40°F or lower and consume within a month.
