- For the Marinade
- 3 tablespoons olive oil
- 3 chipotle peppers in adobo sauce plus 2 tablespoons of the sauce
- 4 garlic cloves or 2 teaspoons garlic powder
- ½ medium onion chopped
- 1 tablespoon smoked paprika
- 1 teaspoon ancho chile powder
- 1 teaspoon chili powder
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- Juice of 1 lime
- For the Chicken
- 2 pounds boneless skinless chicken thighs or chicken breasts if preferred
- Fresh cilantro – For garnish
Make the marinade.
Add olive oil, chipotle peppers, adobo sauce, onion, garlic, smoked paprika, ancho chile powder, chili powder, salt, black pepper, and lime juice into a food processor. Blend until smooth.
Marinate the chicken.
Place chicken thighs in a large bowl or zip-top bag. Pour marinade over the chicken, making sure each piece is coated. Cover and refrigerate for at least 1 hour, or up to 24 hours for maximum flavor.
Cook the chicken.
Heat a large skillet or grill pan over medium high heat. Add a drizzle of olive oil. Cook the chicken for 5–7 minutes per side, or until internal temperatures reach 165°F. The chicken should be golden brown with a slight char.
Rest & slice.
