Ingredients
  

  • 12 whole chicken wings
  • ¼ cup cornstarch
  • 2 cups all-purpose flour
  • Oil as needed for frying
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon black pepper
  • ½ teaspoon white pepper
  • ½ teaspoon garlic powder
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 2 teaspoons sesame oil
  • 2 tablespoons soy sauce for rice
  • 1 teaspoon sesame oil for rice
  • 2 cloves garlic minced
  • 1 teaspoon grated ginger
  • 2 cups pre-cooked brown rice
  • 3 tablespoons oil for stir-frying
  • 2 large eggs
  • 1 cup mixed vegetables peas, carrots, green onions
  • 1 tablespoon garlic butter

Instructions
 

  • Clean and marinate the chicken wings with salt, sugar, black pepper, white pepper, garlic powder, Shaoxing wine, soy sauce, fish sauce, and sesame oil. Let sit for 1 ½ hours.
  • Mix cornstarch with all-purpose flour for the crispy coating.
  • Heat oil to 375°F (190°C) in a wok. Fry the wings in batches for about 10 minutes until golden brown and crispy. Set aside.
  • Heat a large wok or frying pan over high heat. Add 3 tablespoons of oil.
  • Stir-fry the vegetables for 2-3 minutes until tender-crisp. Push them to the side of the pan.
  • Crack and scramble the eggs in the center of the wok.
  • Add the pre-cooked rice and stir-fry for 3-4 minutes until slightly darkened.
  • Return the crispy chicken wings to the wok. Add soy sauce and garlic butter.
  • Continue cooking for another 3-4 minutes until well combined.
  • Serve hot and enjoy!

Notes

  • Use day-old rice for better texture. If using fresh rice, spread it on a baking sheet and refrigerate for 30 minutes before cooking.
  • Fry the wings in small batches to avoid overcrowding and ensure crispiness.
  • For extra flavor, add oyster or hoisin sauce to the rice.
  • Customize the vegetable mix based on preference.
