- 12 whole chicken wings
- ¼ cup cornstarch
- 2 cups all-purpose flour
- Oil as needed for frying
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon black pepper
- ½ teaspoon white pepper
- ½ teaspoon garlic powder
- 1 tablespoon Shaoxing wine
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 2 teaspoons sesame oil
- 2 tablespoons soy sauce for rice
- 1 teaspoon sesame oil for rice
- 2 cloves garlic minced
- 1 teaspoon grated ginger
- 2 cups pre-cooked brown rice
- 3 tablespoons oil for stir-frying
- 2 large eggs
- 1 cup mixed vegetables peas, carrots, green onions
- 1 tablespoon garlic butter
Clean and marinate the chicken wings with salt, sugar, black pepper, white pepper, garlic powder, Shaoxing wine, soy sauce, fish sauce, and sesame oil. Let sit for 1 ½ hours.
Mix cornstarch with all-purpose flour for the crispy coating.
Heat oil to 375°F (190°C) in a wok. Fry the wings in batches for about 10 minutes until golden brown and crispy. Set aside.
Heat a large wok or frying pan over high heat. Add 3 tablespoons of oil.
Stir-fry the vegetables for 2-3 minutes until tender-crisp. Push them to the side of the pan.
Crack and scramble the eggs in the center of the wok.
Add the pre-cooked rice and stir-fry for 3-4 minutes until slightly darkened.
Return the crispy chicken wings to the wok. Add soy sauce and garlic butter.
Continue cooking for another 3-4 minutes until well combined.
Serve hot and enjoy!
- Use day-old rice for better texture. If using fresh rice, spread it on a baking sheet and refrigerate for 30 minutes before cooking.
