Ingredients
  

  • 230 grams of cream cheese
  • cup 67 grams of granulated sugar
  • 1 teaspoon of vanilla extract
  • ½ teaspoon of lemon zest
  • ¾ cup 90 grams of graham crackers or tea biscuits

  • Cocoa powder
  • Crushed gluten-free graham crackers

Instructions
 

  • Prepare the cheesecake mixture by mixing 200 grams of cream cheese, 200 grams of powdered sugar, 1 teaspoon of vanilla extract, and 1 teaspoon of cinnamon powder in a bowl. Blend for 3 to 4 minutes until smooth and creamy.
  • Crush 230 grams of tea biscuits and add them to the mixture.
  • Chill the mixture in the fridge for 30 minutes to 1 hour.
  • Roll the chilled mixture into 1-1/2 inch balls using a small cookie scoop.
  • Coat the balls in your chosen coating (graham crackers, cocoa powder, sprinkles, or chopped nuts).
  • Chill the coated balls for 15-30 minutes until the coating sets, and refrigerate for at least 4 hours or overnight before serving.
