Ingredients
  

  • 2 cups blueberries fresh or frozen; if frozen, no need to thaw
  • 1/3 cup granulated sugar adjust up or down depending on sweetness of berries
  • 2 tablespoons brown sugar adds a warm, caramel depth
  • 1 tablespoon lemon juice brightens and balances the sweetness
  • 1 teaspoon lemon zest optional but adds zing
  • 1 teaspoon vanilla extract for cozy, bakery-style flavor
  • Pinch of salt enhances the berries’ natural flavor
  • 2 teaspoons cornstarch mixed with 2 tablespoons cold water slurry for thickening, optional if you prefer a looser compote

Instructions
 

  • Combine Ingredients
  • Place blueberries, granulated sugar, brown sugar, lemon juice, zest, vanilla, and salt into a medium saucepan. If using frozen berries, toss them straight in.
  • Cook on Medium Heat
  • Set the pan over medium heat. Stir occasionally as the berries release their juices. You’ll notice the blueberries starting to burst after 3–5 minutes.
  • Simmer
  • Let the mixture bubble gently for about 10 minutes, stirring occasionally. The smell alone will tell you you’re on the right track — sweet, tangy, and irresistible.
  • Thicken (Optional)
  • If you want a thicker compote, stir in the cornstarch slurry. Cook for another 1–2 minutes until glossy and slightly thickened.
  • Cool & Store
  • Remove from heat. Remember: the compote will thicken as it cools. Transfer to a mason jar or airtight container and let it cool to room temperature before refrigerating.

  • Stored properly, compote lasts up to 7 days in the fridge.
  • Freeze in airtight containers for up to 3 months.
