- ½ cup unsalted butter
- 1½ cups granulated sugar
- 2 eggs
- 2 cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- 1 cup buttermilk or substitute: 1 cup milk + 1 tbsp lemon juice or vinegar
- ½ cup sugar for cinnamon-sugar mixture
- 2 teaspoons ground cinnamon for cinnamon-sugar mixture
Preheat oven to 350°F (175°C).
Cream together ½ cup of butter and 1 cup of sugar. Add eggs and vanilla extract, and mix well.
In a separate bowl, mix the flour, baking soda, and salt. Add this mixture and 1 cup of buttermilk alternately to the butter mixture. Stir until just combined.
In a small bowl, mix ½ cup sugar and 2 teaspoons ground cinnamon for the cinnamon-sugar swirl.
Pour half the batter into a greased loaf pan. Sprinkle half of the cinnamon-sugar mixture over the batter.
Add the remaining batter and top with the rest of the cinnamon-sugar. Swirl with a butter knife.
Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
Let cool in the pan for 10 minutes before transferring to a wire rack.
